From: Hootie's Corner
Ingredients:
3/4 cup light corn syrup
3/4 cup packed brown sugar
1/2 cup butter or margarine (melted)
2 tsp vanilla
3 eggs
2/3 cup old fashion oats (oatmeal)
1/2 cup chocolate chips
1/2 cup flaked coconut
1 store bought or homemade deep 9" pie crust
Directions:
1. Heat oven to 350 degrees.
2. Mix corn syrup, brown sugar, melted butter, eggs and vanilla together.
3. Stir in oats, chocolate chips, coconut to the corn syrup mixture.
4. Pour mixture (pie filling) into prepared deep dish crust.
5. Bake 45 minutes or until set.
6. Cool completely before serving (average 2 hours).
To make fancier:
You can garnish it with cool whip or vanilla ice cream when serving.
A different view on this recipe:
*Omit chocolate chips and add chopped dates (Not the sugared but the pitted.)
*Omit chocolate chips & add butterscotch chips for a different flavor.
This is a fast dessert that you can make when you need a dessert that is good and easy!
My mouth is watering! I love the idea of adding butterscotch chips too.
